This past weekend I spoke at the Blog Her conference and connected with some people from Johnson & Johnson. I’ve loved J&J since I was a little girl obsessed with their baby shampoo and was really excited to hear some of the ways they’re really making positive impacts. They asked me to shoot a short video about how I use social media to make a difference and I was of course thrilled to talk about how much I love to help teach others about nutrition and healthy cooking.

The one vegetable we always have enough of is kale. It’s growing like a weed in our garden, a good weed, a weed we love! I’ve decided to add stir fry to my list of easy kale recipes. Some of you will be excited to hear that this recipe is not only a vegan kale recipe, but also easily gluten free! Even more exciting, the newest member of our family who loves kale as much as we do. That’s right, it’s time for another series in the Healthy Cooking on a Tight Budget Program! The February series will be our first evening classes. The daytime classes have been packed each week, but a lot of people have asked for evening classes. You ask and I answer! We’ll give this time slot a shot and if it works well maybe I’ll start alternating between day and evening series.
Classes in February include Winter Produce, Soups and Stews, and Easy Side Dishes.

I never thought anything could compare to last year’s Food Blogger Camp. I learned so much and came away so inspired with some incredible friendships. I started saving my pennies to attend this year’s camp but had several emergencies come up in November and December that ate away at my fund. Thanks to the generosity of a friend, I was still able to attend, and boy am I glad that I did. Read more

I love a lot of things at different times; this time of year I love eggnog and hot cider, in the summer I love strawberry lemonade and cucumber juice. But something I love anytime of year is giving. Usually that means giving my time, there’s a reason we cook on a tight budget! We do tithe 10% of our income to our church and give to different charities and opportunities when we can, but we often have times we wish we could give financially but just don’t have it in the budget.
