Korean Recipe for Chicken Thighs

Here’s the promised Korean Chicken Thigh Recipe.   The thighs take only about 5 minutes of prep time and then cook in the oven so you don’t have to stand over the stove to keep an eye on them.  One of my hapa (part Asian) friends in Hawaii had a Korean mom who was a fantastic cook.  These chicken thighs were often marinating in her fridge when I came over, and there was always an extra one if I wanted to stay for dinner! Chinese Recipe for Chicken Thighs in Oyster Sauce

This chicken thigh recipe is so simple to make, and cheap too!  On that grocery trip we finally took I got a huge package of bone in skin on chicken thighs, 25 of them for only $8.  Each thigh is plenty of meat for one person so it’s a great cheap meat to cook with.  I prefer buying whole chickens locally, but the place we used to get them changed farm managers and hasn’t been returning messages since she left.  :( Read more

Super Bowl Party Recipes

Here’s a quick round up of some healthy easy snack options for Super Bowl food.  My goal for Super Bowl recipes is basically to not need silverware.  If I’m focused on the big game, I want to just be able to move my hand to my mouth without having to concentrate on a fork or spoon.  I know, very cro-magnon of me!  But I also don’t want to eat a ton of fattening chips, dips, little wieners, and other typical game foods that leave me feeling sick by the end of the fourth quarter.  Each of these snacks are healthy, EASY, options for your Super Bowl party food.
