Healthy Cute Valentine’s Breakfast Recipe

Whether you have a special someone, children who love cute food, or just want to treat yourself this Valentine’s Day, these muffins are the perfect breakfast treat.  I noticed that most of the Valentine’s Day breakfast recipes out there were typically sugary and full of empty carbohydrates.  These past few months, I’ve been thinking a lot about how cooking is truly an act of love.  I’ve pondered the reasons I cook for the people in my life, and realized that it’s to make them feel loved, bring them joy, and to comfort them.

My conclusion then is that if I really care about them, I should feed them with healthful food made with whole ingredients that will nourish their bodies.  But I also don’t want them to feel deprived, or even worse, think that healthy food is being forced upon them.  That’s where the idea for this adorable muffin recipe came from.  Beautiful chewy muffins made with whole wheat, cranberry applesauce and organic sucanat.  Full of flavor, health, and love. We lost our kitty on Monday.  One day I’ll be able to write a great post about it, but for now the wound is too fresh.  I will post a breakfast recipe in his honor though.  Every morning the first thing I’d do was say hi to Cappucino, then he would curl up in my lap while I had my breakfast.  In cold weather I usually have something hot for breakfast, toast with peanut butter, or oatmeal.  Now that it’s warming up I’ve been craving yogurt, and this rhubarb compote is the perfect pairing. In the grocery store last week, I had a life changing moment.  I was walking through the produce section, ignoring the tempting tropical fruit stand, intent on my quest to try and eat locally as often as possible.  Then, out of the corner of my eye, I spotted them.  Five sirens in an ocean of fruit, calling out to me and me alone.  Their song made me blind to everything else around me.  They were five softball sized papayas, not the giant Mexican variety that are readily available on the mainland, but small and beautiful papayas like I grew up with.  I picked one up and cradled it lovingly in my palms.  Minutes must have gone by as I smelled it, squeezed it, whispered to it, “Are you from Hawaii?  Can it really be?” Read more
