Tapioca Pearls with Sweet Coconut and Mango

Oh yum! Jaden I love this recipe! The sweetness of the coconut, the tangyness of the mango. It’s amazing. Don’t know if I’ll make it again because I might have to eat it all. My husband wasn’t crazy about it. But if any of you Washingtonians want to try it I will!

Mussels in Lemon Grass Curry


I’ve never cooked with mussels before so was excited to give it a try. I discovered while making this dish that I don’t like just noodles and meat. I need the crunch of veggies, I love veggies! But the flavors were fantastic. I’m going to remember the broth and use it for other dishes.
