Great question Alyia. I was wondering the same thing myself making applesauce last week. The technique was one my friend taught me and was so that some was totally pureed (the milled apples) but some were chunky (the peeled/cored apples). Last week I just peeled/cored all the apples and used the immersion blender to get it to the texture I wanted. I don't know if this changes the nutritional value by not milling the peels (which I put into apple butter) but it was a lot easier and meant less dishes to wash! I also skipped the sugar because they were really sweet apple sauce. Think I'll do another post with this technique for sugar free apple sauce.

I can't wait to try this with all my wonderful Autumn apples. I was just wondering why you mill some apples and peel/core others. What is the strategy behind this?

I can't believe how cheap it was for you to make applesauce! I have not made any before, and I am really not sure why. I love having a bowl of it, or on the side with pork. Yours looks delish!
