I don't know how long they'll keep but ours were still good 5 days later after sitting out, so I'd say probably at least a week in an air tight container. 1500 is a lot, good luck! I've had to go to craft stores to get it. I think I've done the same thing as well with the flour. If only there was some way that my measuring cup could tell me just how many cups of flour I've poured out of it. I love that your safeway sells meringue powder.
