
We have been getting a ton of potatoes from our CSA, and as I looked at the pretty little red and blue/purple potatoes, I decided I needed to do something that showed off their colors. I just cut several of them in half and boiled them, then scooped out the centers. I wasn’t sure what to fill them with and thought about several different things, then thought, “why not fill them with themselves?” Kind of like a deviled egg. I decided to separate the blue and red potato filling and am glad that I did. When I tried mixing the ingredients in the blue potato mash, it turned an ugly muddy color. So I used a couple whole red potatoes (no skin) to make enough filling. These are perfect pupus (appetizers) for a party, a great snack, or side dish. Once we even had them for a small dinner! They’re also a great substitute for potato salad at a BBQ.

Another really fun colorful thing we’ve been getting is beans! We pick pretty much all we want. I pickled two pints a week and a half ago. I’ve been waiting to post it so I can taste them and make sure it’s a good recipe. Don’t want to reccomend something I haven’t actually tried! Anyway, I put a jar in my fridge today, and will give them a try and hopefully have a great post about them for you Friday or Saturday. Joining a CSA is the best food decision we’ve ever made!

Deviled Potato Bites
serves 4 as appetizerIngredients
6 small potatoes
water
pinch sea salt
1 tsp mustard
1 TBS mayonnaise
dried dill
Instructions
Wash each potato and cut it in half. Bring a large pot of water to a boil and add sea salt. Carefully drop potatoes in and boil for 10-20 minutes depending on size, until easily pierced with a fork. Remove the potatoes from the water.
Scoop the center out of the potatoes into a bowl. Add mustard and mayonnaise and mix well. Spoon it into the potato halves and top with dill.
Approximate cost/serving: Potatoes are cheap! You can make these as an appetizer or side for less than 10 cents a serving.
Vegetarian/gluten free: These are vegetarian, you can even make them vegan using vegan mayonnaise. Totally gluten free.

I’ve stuffed potatoes and I’ve devilled eggs, but never thought to devil potatoes. I’ll try this. Those coloured potatoes are so pretty, btw.

Do you heat these or eat them cold??

We eat them at room temperature because they cool as they’re assembled, or cold if I make them in advance. I’d love to hear if anyone has tried them hot!
